Vegetable Stir-Fry with Tofu

Ingredients

  • 14 oz extra firm tofu pressed and cubed
  • 2 tbsp vegetable oil
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 carrot julienned
  • 3 cloves garlic minced
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water
  • Sesame seeds for garnish

Directions

  1. Press tofu for 15 minutes, then cut into cubes.
  2. Heat 1 tbsp oil in a wok over high heat. Add tofu and cook until golden on all sides. Remove and set aside.
  3. Add remaining oil. Stir-fry broccoli, pepper, and carrot for 3-4 minutes.
  4. Add garlic and cook 30 seconds until fragrant.
  5. Mix soy sauce, rice vinegar, sesame oil, and cornstarch slurry. Pour over vegetables.
  6. Return tofu to wok. Toss everything together until sauce thickens.
  7. Garnish with sesame seeds. Serve over rice.

Notes

  • Press the tofu well for maximum crispiness.
  • Cut vegetables to similar sizes for even cooking.
  • Add chili flakes for heat.
