Vegetable Stir-Fry with Tofu

Ingredients
- 14 oz extra firm tofu pressed and cubed
- 2 tbsp vegetable oil
- 2 cups broccoli florets
- 1 red bell pepper sliced
- 1 carrot julienned
- 3 cloves garlic minced
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp cornstarch mixed with 2 tbsp water
- Sesame seeds for garnish
Directions
- Press tofu for 15 minutes, then cut into cubes.
- Heat 1 tbsp oil in a wok over high heat. Add tofu and cook until golden on all sides. Remove and set aside.
- Add remaining oil. Stir-fry broccoli, pepper, and carrot for 3-4 minutes.
- Add garlic and cook 30 seconds until fragrant.
- Mix soy sauce, rice vinegar, sesame oil, and cornstarch slurry. Pour over vegetables.
- Return tofu to wok. Toss everything together until sauce thickens.
- Garnish with sesame seeds. Serve over rice.
Notes
- Press the tofu well for maximum crispiness.
- Cut vegetables to similar sizes for even cooking.
- Add chili flakes for heat.
